If you’re trying to decrease the amount of added sugar in your life but still crave a sweet treat once in a while, these Peanut Butter Protein Bites will be a big hit!
Using natural peanut butter, with only peanuts and salt in the ingredients, dates with only one ingredient . . . dates . . . and chia seeds for a little extra protein boost, these protein treats are a great snack after a workout, and you won’t even realize that they are completely natural!
Just beware! While these are much healthier than a candy bar, they are not necessarily low-calorie. So keep that in mind if you’re trying to drop a few pounds.
Peanut Butter Protein Bites
Here’s what you’ll need:
- 1 cup dates, pitted (you may need to soak to rehydrate a bit if these are too dry)
- 2/3 cup natural peanut butter (peanuts and salt as the only ingredients)
- 1/3 cup oats, rolled or quick-cooking (not individual packets!)
- 1 tsp pure vanilla
- 1 Tbsp chia seeds
- 1/4 cup Walnuts, chopped
How to do it:
Process the dates in a food processor. Add peanut butter, vanilla, and chia seeds. Process till combined. Add Oats and pulse till blended.
Transfer mixture to a bowl and hand mix walnuts. I hand mix because I want a little crunch to them but if you want a smoother result, you can add the walnuts to the processor.
Roll into ping-pong ball sized balls. Refrigerate. You can double the recipe and freeze them as well.
