According to folklore, the Buckeye resembles the eye of a deer and carrying one brings good luck.  So it’s really lucky that you happened to read this Buckeye candy recipe.

I wouldn’t recommend carrying one of these around in your pocket . . . but popping one, made from peanut butter and chocolate, into your mouth might have the same affect . . . don’t you think?

Buckeye’s are not to be confused with the chestnut.  They look very similar, but real Buckeye’s are not full of chocolate and peanut butter deliciousness.  So, while we are making Buckeye candy today, we’re going to sing about Chestnuts . . .  because I don’t know any Christmas songs about Buckeye’s.  Click on the Roasting Chestnuts link below for your listening enjoyment while you read . . .

Peanut butter is my life . . .  I can’t imagine a world without it.

It’s part of my daily diet  . . .

I get very nervous when I get down to the last jar in the pantry.

I always have to have a backup jar in case of a disaster . . . It would truly be a disaster if I ran out of peanut butter.

So, without a doubt, Buckeye’s are one of my favorite, heaven sent Christmas treats.

And they’re really pretty easy to make . . .

 

Christmas Buckeye’s:

  • 2 cups graham cracker crumbs
  • 2 cups powdered sugar
  • 2 cups (or 1 pound 8 oz jar) crunchy peanut butter
  • 1/2 cup (1 stick) softened butter
  • Milk chocolate chips or almond bark

Mix it all together (except for the chocolate) and roll into balls.

Put them in the freezer for and half an hour or so to firm them up a bit . . .

While they’re in the freezer, start melting the chocolate.

Sometimes I use half semi-sweet chocolate chips and half vanilla almond bark melted together if I don’t have milk chocolate chips. . . there’s no real difference, I my opinion.

Just get em all coated . . .

Shake the excess off . . .

And let them sit till the chocolate hardens.

See how easy that was?

They are so amazing.  If there are any left after Christmas . . . to keep my waistline in tact . . . I put them in a ziplock back and store them in the freezer.  That way I don’t feel compelled to eat all of them at once.  Or . . . you can just say “It’s Christmas” and eat them all up before January first when you start your diet. . . .

AHHH!  I love those buckeye’s!!!!

Christmas Buckeye’s:

  • 2 cups graham cracker crumbs
  • 2 cups powdered sugar
  • 2 cups (or 1 pound 8 oz jar) crunchy peanut butter
  • 1/2 cup (1 stick) softened butter
  • Milk chocolate chips or chocolate almond bark (about 24oz)

Mix all but the chocolate together and roll into balls.  Place them in the freezer for about 1/2 an hour to firm up.

Meanwhile, melt the chocolate in the microwave, double boiler, or oven at a low setting.

Then dip each one in the chocolate coating and place on a cookie sheet lined with foil or waxed paper to allow chocolate to harden.
