Christmas Buckeye’s:
- 2 cups graham cracker crumbs
- 2 cups powdered sugar
- 2 cups (or 1 pound 8 oz jar) crunchy peanut butter
- 1/2 cup (1 stick) softened butter
- Milk chocolate chips or chocolate almond bark (about 24oz)
Mix all but the chocolate together and roll into balls. Place them in the freezer for about 1/2 an hour to firm up.
Meanwhile, melt the chocolate in the microwave, double boiler, or oven at a low setting.
Then dip each one in the chocolate coating and place on a cookie sheet lined with foil or waxed paper to allow chocolate to harden.
